I am really sorry for a long hiatus! I am moving to new place and have many things to do. But still, I love gorgeous foodies!
After a new year party held by my office, I really inspired (and refreshed) with an awesome vegetarian dish they prepared for me. I never know that we can enjoy vegetarian and foods very well! I really want to cook refreshing vegan food at home!
While it is winter, beetroots are on season. It gives me idea to prepare a fresh dish for our awesome dinner using beetroots:)
When in Indonesia, I hate beetroot. But after I know how to cook them, wow!!!it just AWESOME. If you are not a vegan or vegetarian, you can try this one for diet 😉 just try and ehm thank me later.
Couscous with Spicy-Sour Spinach Beetroot Sauce
Salt and paper for taste
How to cook?
* cut beetroot in “potato chips size”. Prepare bake plate, pour some olive oil and the cutted beetroot. Bake in the oven for 20 minutes. In case you don’t gave oven… fried it will also no prob.
*while waiting, cook couscous in vegetable stock. Set aside
*sauce: stir-fry onions and garlic. And then mix with tomato paste and chili powder. baked beetroot. Then time to mixed it with the baked beet, and spinach. Don’t cook too long after you put the spinach. Mixed with lemon juice, salt, pepper. Mix
* place above the couscous.
And voila! You ready with your plate 🙂
